• Clean the turkey and defrost it if frozen. Rinse with cold water and pat it dry.
• Build a fire to get a steady temperature of around 230 degrees Fahrenheit; this can be got by heating the smoker to around 250 degrees F when putting the turkey in; it will slowly drop to 230 degrees.
• So put in the turkey at 250 degrees. You can soak the turkey in your desired flavor like brine or dry spice rub or olive oil brush.
• While placing the turkey in, ensure that the breast side is up. You can place it on the rack or use a roasting pan.
• Ensure that the smoker is at the right temperature every hour so that the turkey gets cooked well; it will take several hours to get cooked.
• Take an approximate of 30 minutes for cooking one pound of turkey; in this way calculate the time as per the weight of the turkey. Once this time lapses, start checking if the turkey is done.
You can check the progress by using a thermometer at two different places; you have to get two readings of about 165 degrees. At this particular point, the turkey can be taken out.
